Co-Founders
Pete & Rosie Keopaseut
Pete and Rosie are the co-owners and visionaries behind Escape 360 Cafe, bringing more than two decades of experience in developing and growing successful restaurant brands. Together, they founded Thai Noodle Wave in 2003, helping establish it as one of the first Zabiha Halal Thai restaurant concepts in the Dallas–Fort Worth area. Through their commitment to quality, innovation, and hospitality, they expanded the brand into multiple successful locations before creating Wave Bowl and, later, Escape 360 Cafe.
Rosie is the culinary mastermind behind every menu at Escape 360 Cafe. A passionate chef with an exceptional eye for detail, she personally developed every specialty drink, signature dessert, and food offering that defines the brand. From perfecting espresso extraction each morning to refining recipes and maintaining the highest quality standards, her craftsmanship is reflected in every guest experience. Her culinary expertise has also shaped the menus of Thai Noodle Wave and Wave Bowl, making her the creative force behind the flavors that guests have come to love.
Pete serves as the company’s chief executive leader, overseeing the vision, strategy, and growth of every concept. He leads the major business decisions, brand development, operations, and expansion initiatives, ensuring that each location reflects the company’s standards and long-term vision. From concept creation and restaurant design to operational systems and strategic planning, Pete is the driving force that transforms ideas into thriving hospitality brands.
Together, Pete and Rosie blend visionary leadership with culinary excellence to create concepts that are distinctive, scalable, and built for long-term success. Their shared commitment to innovation, quality, and genuine hospitality continues to shape Escape 360 Cafe as it grows into a premier franchise brand while preserving the experience and standards that have defined their businesses for more than two decades.

Cherif Fadel Aidara
Cherif Fadel Aidara is an entrepreneur, business strategist, certified Human Rights Consultant, author, and multilingual executive committed to building sustainable franchise systems and meaningful business partnerships. As Chief Franchise Officer of Escape 360 Cafe, he leads the company’s franchise development, growth strategy, operational standards, and franchisee support, ensuring consistency and excellence across every location.
Educated in Türkiye and the United States, Fadel combines strategic thinking with operational expertise to develop scalable business models that promote long-term success. His ability to communicate across multiple languages and cultures has enabled him to build strong relationships with partners, investors, and entrepreneurs from diverse backgrounds.
Beyond franchising, Fadel is the author of numerous books on leadership, entrepreneurship, personal development, and social thought. He believes that successful franchising is built on trust, innovation, and empowering others to grow. His vision is to help expand Escape 360 Cafe into a globally recognized brand while maintaining the quality, culture, and customer experience that define the company.
